Instant Pot Lentil Soup
Ingredients
- 2 celery stalks diced
- 2 carrots diced
- 1 onion diced
- 3 garlic cloves
- 1 can fire roasted tomatoes 14.5 oz
- 1 cup lentils
- 1 1/2 cups potatoes peeled and diced
- 32 fl oz vegetable broth
- 1 tsp italian seasoning
- 2 bay leaves
- salt and pepper to taste
Instructions
- Turn instant pot on sauté setting and drizzle with olive oil once heated.
- Once heated, put the celery, carrot, and onion into the pot and sauté about 5 minutes. Then add minced garlic and sauté for another minute.
- Add remaining ingredients.
- Turn pot off, then put lid on. Set manual, high pressure for 18 minutes. After time, natural pressure release.
