Instant Pot Lentil Soup

Ingredients
  

  • 2 celery stalks diced
  • 2 carrots diced
  • 1 onion diced
  • 3 garlic cloves
  • 1 can fire roasted tomatoes 14.5 oz
  • 1 cup lentils
  • 1 1/2 cups potatoes peeled and diced
  • 32 fl oz vegetable broth
  • 1 tsp italian seasoning
  • 2 bay leaves
  • salt and pepper to taste

Instructions
 

  • Turn instant pot on sauté setting and drizzle with olive oil once heated.
  • Once heated, put the celery, carrot, and onion into the pot and sauté about 5 minutes. Then add minced garlic and sauté for another minute.
  • Add remaining ingredients.
  • Turn pot off, then put lid on. Set manual, high pressure for 18 minutes. After time, natural pressure release.
